1. Chicken Tikka
5/8 cup plain yogurt.
4 garlic cloves, peeled & crushed 1 1/2 inch fresh ginger,
peeled & chopped 1 small onion,
grated 1 1/2 teaspoon chili powder 1 tablespoon.
4 chicken breasts 1 large onion,
thinly sliced into rings 2 large tomatoes,
sliced 2 tablespoons coriander leaves.
Combine first 7 ingredients and set aside. Cut chicken into 1-inch cubes. Add chicken to marinade, mix well, cover and chill for 6 hours or overnight.
Heat broiler. Put chicken in broiler pan and broil 5 to 8 minutes, turning occasionally until cooked through. Garnish with onion rings, tomatoes, and coriander leaves and serve warm.
2. Waldorf Chicken
6 chicken breasts.
1 cup unsweetened apple juice.
1/4 teaspoon ground ginger.
1 tablespoon cornstarch.
2 cups unpared red apples.
chopped 2 stalks celery.
sliced 3 tablespoons raisins.
1 tablespoon sliced green onion.
1 tablespoon lemon juice.
1/4 teaspoon salt (optional).
Place chicken, 1/2 cup apple juice, and lemon juice and salt in a large skillet. Heat to boiling, cover and simmer for 20 minutes or until chicken is tender and done.
Remove chicken. Mix in remaining apple juice and cornstarch. Stir constantly. Add remaining ingredients. Arrange chicken on plate and top with the sauce.
3. Chicken in Orange Sauce
4 chicken breast halves.
1/4 cup flour Salt and pepper.
4 tablespoons butter.
1 ½ cups orange juice rice, cooked.
Coat each chicken breast with flour seasoned with salt and pepper. Melt butter in a pan and saute each side over medium heat until lightly browned.
Add orange juice and cover. Coo about 10-15 minutes more on reduced heat until done. Serve the chicken over rice with sauce.
4. Honey Baked Chicken
3-4 pounds of chicken, cut up.
1/2 cup butter, melted.
1/2 cup honey.
1 teaspoon salt.
1/4 cup yellow mustard.
1 teaspoon curry powder.
Mix together all ingredients except chicken. Place chicken in a baking pan. Pour mixture over chicken. Bake at 350 degrees F for 1 hour and 15 minutes, basting every 15 minutes.
5. Oriental Chicken :
1 Chicken breast, quarter, cut into slivers.
1/2 cup onion, sliced.
1/2 cup carrots, sliced.
1 tablespoon peanut oil.
1 garlic clove, minced.
2 tablespoons soy sauce.
Heat oil in a large skillet. Saute all ingredients except soya sauce over high heat. Stir-fry for 15 minutes. The lower heat to medium and cook until chicken is cooked through about 10 minutes. Add in soy sauce.
6. Grilled Chicken :
1 cup of soy sauce.
3 cups water.
3 tablespoons dark Karo syrup.
1/2 teaspoon ground ginger.
5-6 cloves garlic, minced.
1 teaspoon Worcestershire sauce.
4 whole skinless chicken breasts.
Mix together all ingredients except chicken. Marinate chicken in mixture for at least 4 hours. Grill chicken on low for 1 hour.
7. Honey Gingered Chicken :
3 tablespoons honey.
1 teaspoon orange zest.
1 tablespoon orange juice.
2 teaspoons soy sauce.
1/4 teaspoon pepper.
2 chicken breasts, skinned and halved lengthwise.
In a small bowl, stir together all ingredients except chicken. Broil chicken with the honey mixture using a pastry brush while broiling. Serve chicken with rice.
8. Baked Taco Chicken:
2 (1.25) packages of taco seasoning.
1/2 teaspoon salt.
2 tablespoons milk.
1 cup all-purpose flour.
2 whole chickens (3-4 pounds), cut up.
Combine the flour, taco seasoning and salt in a large resealable bag. Beat eggs and milk in a shallow bowl. Dip chicken pieces in an egg mixture.
Place chicken pieces in the resealable bag and shake to coat. Place chicken bone side down in a greased 15″X10″ baking pan. Bake the chicken uncovered for 55-60 minutes or until juices run clear at 350 degrees F.
9. Chicken Stew ‘Fricot’ :
1 tablespoon butter.
1 onion chopped.
6 potatoes cubed.
1 (2-3 pound) whole chicken, cut into pieces.
2 teaspoons dried savory salt and pepper to taste.
In a large pot, brown the chicken with chopped onions. Add water to cover the chicken and onions. Add water to cover the chicken and onions. Simmer for 30 minutes.
Add carrots, potatoes and savory. Simmer until vegetables are cooked. Season the stew with some salt and pepper to taste.
10. Marinated Chicken Barbecue :
1 cup ketchup.
1/4 cup lemon juice.
1/2 cup vegetable oil.
8 skinless, boneless chicken breasts.
Mix together all ingredients except chicken. Place chicken in a baking dish. Pour marinade over chicken. Cover and refrigerate overnight. Bake at 350 degrees F for 45 minutes. Baste the chicken every 15 minutes and turn once.
11. Buttermilk-Pecan Chicken
1/3 cup butter.
1 cup pecans, ground turmeric.
1 cup flour.
1/4 cup sesame seeds.
1/2 teaspoon salt.
1/8 teaspoon pepper.
1 cup buttermilk.
1 egg, slightly beaten.
8 chicken breast halves, skinned and boned.
1/4 cup coarsely chopped pecans.
Melt butter in a 13×9 inch baking dish. Set aside. Combine flour, ground pecans, sesame seeds, paprika, salt, and pepper. Combine slightly beaten egg and buttermilk. Dip chicken in egg mixture.
Then dredge in flour mixture, coating well. Place chicken in the baking dish. Turn the chicken once to coat with the butter. Sprinkle the chicken with coarsely chopped pecans.
Bake at350 degrees F for 30 minutes. Now your chicken recipes are ready to serve.
12. Baked Chicken with Artichokes:
5 boneless, skinless chicken breasts salt.
1/2 medium red onion, sliced.
1(8-ounce jar) quartered artichokes, drained.
2 tablespoons olive oil.
1/2 lemon, cut into 5 slices.
1/2 teaspoon dried oregano.
Season the chicken with a little salt and pepper. In a skillet over medium heat, cook the onions in 1 tablespoon olive oil for 5 minutes. Remove onions from skillet.
In the same skillet add 1 more tablespoon olive oil, cook chicken over medium heat for 5 minutes on each side. your chicken recipes are ready to serve now.
13. Spaghetti with Broccoli and chicken
1 (16ounce) package spaghetti, cooked.
1 (16ounce) package frozen chopped broccoli, cooked.
3 cloves garlic.
3 skinless and boneless chicken breast halves, cooked.
5 tablespoons olive oil.
Salt and Black pepper.
Season chicken with a little salt and pepper. Grill or broil chicken until no longer pink. Cube cooked chicken. Cook spaghetti or broccoli separately as directions given in their packages. Run garlic through a garlic press.
Combine pressed garlic and olive oil in a small bowl. Toss chicken, spaghetti, broccoli an garlic oil together. Add salt pepper to give it a taste. Top chicken recipes with cheese(Parmesan).
14. Chicken Seasoning Blend:
1/2 teaspoon dried basil.
1/4 dried parsley.
1/2 teaspoon garlic powder.
1 teaspoon crushed dried rosemary.
1/2 teaspoon paprika.
1/8 ground cumin.
1/2 teaspoons celery dried thyme.
1/2 teaspoons sea salt.
1/4 celery seed.
1/8 teaspoon cayenne pepper.
1/2 teaspoon ground black pepper.
Mix together all ingredients until well blended. Your blended chicken recipes are now ready to serve.
15. Chicken Salad Pitas:
1/2 cups cubed cooked chicken
1 medium carrot, julienned
1/2 cup sliced black olives
1/4 cup sliced radishes
1/3 cup Italian salad dressing
5(6inch) pita bread
Combine radishes, chicken, olive, cheese, carrot, and cucumber in a bowl. Add dressing. Toss to coat. Line every bread pieces with lettuce leaves. Stuff about 1/4 cup of the chicken mixture into each pita bread.
